Start with two cuts, then order more
For a first Chaoshan beef hotpot meal in Shenzhen, start with 吊龙, one other sliced cut, beef balls and a vegetable. Add noodles at the end if you are still hungry. Ordering the whole menu before the broth arrives leaves you juggling raw plates instead of enjoying dinner.
The appeal is simple: beef cooked at the table in a light broth, with a sauce you mix yourself. You choose the cuts and the pace. If you do not read Chinese, save the names below and show them to staff.
Set up mobile payment before dinner. For QR menus and ordering help, use the Shenzhen eating guide.
What to order
Menus divide the beef more precisely than “lean” and “fatty.” Ask staff to point out a lean cut and a richer one rather than trying to memorize the whole diagram.
| Menu name | How to use it for your first order |
|---|---|
| 吊龙 (diàolóng) | Start here if you want a sliced-beef plate |
| 五花趾 (wǔhuāzhǐ) | Ask staff how its texture compares with 吊龙 |
| 匙仁 (chírén) | Another sliced cut to compare once you know what you like |
| 脖仁 (bórén) | Ask which part and texture the restaurant serves under this name |
| 胸口朥 (xiōngkǒu láo) | A fatty cut; ask to see the portion before ordering |
| 牛肉丸 (niúròu wán) | Beef balls, cooked separately from the thin slices |
| 牛筋丸 (niújīn wán) | Beef balls with tendon for a different texture |
Cut names and English translations do not line up neatly across menus. The Chinese name is more useful at the table than an English butcher’s label.
For two people, order two plates of sliced beef, a portion of balls and a vegetable to start. Check portion sizes and the broth charge first. You can add a third cut later; an advertised set meal is only a bargain if you want what is in it.
Cooking: ask for a demonstration
Do not use a universal eight-second timer. Cooking depends on the thickness, quantity and temperature of the food and broth. Ask staff to demonstrate with the actual cut you ordered, and make sure it is cooked thoroughly.
Keep the utensils used for raw meat separate from the ones you eat with. After the pot is topped up, let it return to a boil before cooking another batch. Beef balls need their own cooking instructions; floating is not a reliable substitute for checking that food is cooked through. These basics follow the Hong Kong Centre for Food Safety’s hotpot guidance.
Useful phrases to show staff:
- 可以帮我们煮第一份吗? — Could you help cook the first portion?
- 这个要煮多久? — How long does this need to cook?
- 请帮我确认熟了。 — Please help me check that it is cooked through.
Do one small batch at a time. Emptying a whole plate into the pot makes it harder to follow the cooking instructions and find your food again.
The sauce: try 沙茶酱
沙茶酱 (shāchá jiàng) is the sauce to look for. Try a little before adding garlic or chili; you can adjust your own dish without changing everyone’s broth.
If you have an allergy, ask about the sauce, stock and handling before ordering. Do not assume a clear broth or a beef restaurant is free from seafood, peanuts or other allergens. Show your allergy in Chinese and ask staff to confirm the ingredients. A busy condiment counter is a poor place to guess.
There is no need to pass a local-etiquette test. Use the sauce you enjoy. Soy sauce is not evidence that the beef is bad, and a cloudy pot is not a freshness test.
Finding a restaurant in Shenzhen
Search 八合里海记牛肉店 (Bāhélǐ Hǎijì Niúròu Diàn) in Amap or Dianping and choose the exact branch near your hotel. 陈记顺和 is another name to search if the first queue is too long. Check today’s address, opening hours, menu and queue before travelling across town.
Do not treat a chain name, a celebrity visit or a large review count as a guarantee about every branch. Look at recent branch-specific information, confirm the dishes you want and inspect the menu price before sitting down.
If the listing offers 排队取号, it means taking a queue number. Check whether you must arrive before your number is called. If the app will not accept your account, ask the host at the restaurant instead.
For a coupon, confirm the branch, dates, number of diners and included dishes before buying. The Dianping and Meituan guide explains the checks. Do not redeem a coupon until staff confirm it applies to your meal.
Before you leave the table
Check the bill for the broth, drinks, sauces and any extras you added. If you need a taxi, copy the branch’s Chinese address into your map app; the chain name alone can send the driver to a different location.
Next meal: try dim sum in Shenzhen for a very different pace, or use the eating guide to pick another cuisine.
